In France, a bouillon is a traditional, spacious restaurant that usually serves traditional French cuisine, in particular a Bouillon (broth) which has provided the name for this class of restaurants. Bouillon l’Entrecôte, such as his precursor in Pymble, Brasserie l’Entrecôte, takes a nod from the original Le Relais de l’Entrecôte, the famous one dish steakhouse that opened in 1959 in Porte Maillot, Paris.
